+The Percheron is the great cider horse. They would pull the apples from the orchard in their cart and then turn the stone auges to press the cider. This Norman-style blend of last season's high-acid Michigan apples is aged in French oak, refermented with Brettanomyces, then aged again in red wine barrels.
